Amaranth (chaulai saag) is a fast-growing leafy vegetable and grain crop used across Indian, African, and Central American cuisines. The leaves are cooked like spinach; the seeds (rajgira) are a nutritious grain used in laddoos and rotis. Extremely productive and heat-tolerant.
